Often described as a Filipino ‘shortbread’, polvoron is a popular snack item - crumbly, biscuity, a little sweet, and very more-ish. It makes for a great treat, as well as an excellent pasalubong, a token gift you bring back from your travels to show your loved ones you were thinking about them.
Traditional polvoron sees toasted flour, sugar, powdered milk and butter mixed together and then pressed into a mould, forming a small tablet which is then wrapped in tissue paper or cellophane. This vegan version not only amps this up with the addition of toasted pinipig (pounded young rice), but also uses coconut milk powder, which adds a wonderful floral aroma.
Enjoy it as is, or crumbled over your favourite ice creams or creamy cakes.
SUGGESTED USAGES: Eat it by itself, like a little biscuit. Alternatively, crumble it into small pieces and use it as a topping for ice cream, yoghurt, cheesecakes, pannacottas, possets, fools, or any other desserts where you want a crunchy counterpoint
